If you have the corresponding rights as process owner you can change the completion time of an instance. Select the checkbox of the desired instance. Click on Export at the end of the instance overview.

Changing the deadline for an escalation
Enter the new completion time. Click on Execute. The new date will be entered into the instance history list.
